Bald Rock Beef Jerky uses beef from my family's property Bald Rock and the surrounding Tenterfield district. The cattle raised are grass-fed and free-range. The meat is marinated and dried using an ancient drying process that preserves the natural flavours of the jerky. This is an original recipe I created initially inspired after I returned from a trip to Africa.
